Make this Easy Turkey Chili for those cold winter nights.  This hearty dinner fits perfectly with the CMWL Modified plan.

Ingredients

1 cup long-grain white rice, uncooked

1 lb. skinless ground turkey breast, uncooked nonstick spray

1 cup chopped onion, raw (about 1 medium onion)

2 tsp chili powder

1 Tbsp cumin

2 cups canned kidney beans, drained

2 cups black beans, drained

1-1/2 cups crushed tomatoes, drained

salt and pepper (to taste)


Preparation

Prepare rice according to package directions.  While rice is cooking, heat a skillet over medium heat.  Coat with nonstick spray, then saute onions until softened, about 3 minutes.  Add ground turkey, cumin, and crushed red pepper and saute, stirring occasionally, until lightly browned, about 5 minutes.  Add black beans, kidney beans and crushed tomatoes and continue cooking until turkey is fully cooked, about 5 minutes.  Salt and pepper to taste.  Place 1/2 cup cooked rice in each of four bowls. Cover each with 1/4 of the chili mixture and serve.
